Why Hillbilly Crack you ask? Simple, when I first turned friends on to my home made beef jerky, they said it was like crack because they couldn't stop eating it. Whatever I gave them would be gone before they got home. When I stopped giving it away, people said they would pay me for it. Since its made in the hills of Tennessee where stills have been replaced with meth labs, Hillbilly Crack just seemed appropriate.
Now considered gourmet jerky, I offer many different flavors. If you have a favorite sauce or rub, send me some and I'll make you some jerky.

Ole Smokey
Ole Smokey is my first, with a noticeable smoke
flavor. Not too much, not too little. First named “original”,
then “smoke”, and now “Ole Smokey”, for the Hillbilly
Crack web debut.

Butt Rubb
Butt Rubb comes from a beef and pork rub that is simply awesome. It is great on any meat, especially on my jerky! Good decision to test this one! This has become a favorite of many and is indeed my personal favorite (this week anyway). Like their motto says, everything is better with Butt Rubb.

Cajun
Cajun is made using a New Orleans style seasoning sprinkled on the marinated beef before drying. Some say this is hot, others say it’s not. I’d give it a medium, and do usually like to have a drink handy. Like all the others, I’ll make it specially mild or hot as you wish.

Sweet Heet
Some call it Meat Candy, this flavor combines a sprinkling of cayenne pepper with a good coat of honey. Its sticky & sweet like candy, chewy like jerky, and hot like, well, cayenne pepper. It starts out sweet and ends up runnin’ you to a drinking fountain. My standard is medium, but even with that you better have some drink handy. I’ll make it mild or hot if you want. Those who think they can take the heat really like this un.

Char Crust
Char Crust calls itself a teriyaki rub sprinkle, and has a slight ginger bend. Not your typical heavy sweet teriyaki, it’s just barely there. A nice touch and included just ‘cause I like it and its easier to make than regular teriyaki.

Mu eta alpha tau (meat) is a Greek flavor that has a mild eastern bend with a touch of garlic. If you like eastern cuisine you’ll probably like this flavor. Just barely a hint of garlic, but I can add more if you like.

I use a local BBQ sauce that is sweet and dark. Makes a mighty fine jerky if I do say so myself. Since it is a favorite of a co-worker and I have to make it, I may as well sell it.

If you haven’t guessed, it’s pickle flavor. Makes you think of eating a hamburger. Soaked in dill pickle juice just a short while so it’s not overpowering. My 100% guarantee says it tastes better than it sounds.

Tennessee Twang has just a tad bit of heat and just enough tang to make you realize its there. You want a drink after a few bites, but you won’t need one. Originally named “Gator” but changed after many people actually though it was alligator meat.

I have tried more Teriyaki sauces than any other flavorings trying to find just the right touch. Most are too sweet, too tangy, or too salty. This Kikkoman brand is just right and I think you Teriyaki fans will like it.

Steakhouse Grill is a little zesty, with maybe just a tad of tang. Another one I just tried and co-workers keep requesting it. The marinade is inexpensive so I really recommend this one!

W’ham-it comes from a special seasoning I found in east Tennessee at the Stonehouse Winery gift shop. I have tried many a spices over the last couple years trying to find that right one for my next great flavor, and this one has made the cut. Not hot at all, but just a little bump to awaken the taste buds.
